INGREDIENTS

2 tb Olive oil
2 lb Lean ground round or ground turkey; as desired
1 lg Onion; chopped
2 Garlic cloves; thinly sliced
1 cn Chicken broth; (14.5 oz)
1 cn Diced tomatoes; undrained (28 oz)
2 sm Cans; (4.8 oz each) diced
; green chilies,
; undrained
1 cn Tomato sauce; (14.8 oz)
3 tb Chili powder
1 ts Ground cumin
1 ts Ground coriander
1 ts Paprika
1/8 ts Cayenne pepper
1 1/2 ts Salt; or to taste
2 cn Kidney beans; drained and rinsed,
; up to 3 (14.8 oz
; each)

INSTRUCTIONS

Brown the ground round or ground turkey in the olive oil, then drain
off any excess grease. Add the onion and garlic and saute 1-2 minutes
or until onion is slightly softened. Stir in chicken broth, tomatoes,
diced chilies, tomato sauce, chili powder, ground cumin, ground
coriander, paprika, cayenne pepper and salt. Cover and simmer about
30 minutes to marry flavors. Stir in drained and rinsed kidney beans
and simmer an additional 15 minutes. Serve over Corn Puffs (see
recipe this month). Yield: 8 servings.
