Carrot Croquettes

1 lb Carrots
2 Eggs
Matzoh meal
2 Onions
Garlic
Marinara sauce

INSTRUCTIONS

Recipes, Marathon Jewish Community Center, Douglaston, NY
grate peeled carrots in processor and drain well. Beat eggs and add
one onion to the processor. Add salt and pepper to the carrots. Add
matza meal to form mixture into small croquettes. Brown the
croquettes in a frying pan and set aside. Brown onion and garlic, add
marinara suace and simmer for about l0 minutes. Layer croquettes in
baking dish. Pour sauce over and bake in 350 degree oven for 45 - 60
minutes. May be served as an appetizer or as a side dish. ( * Mom
serves these all year long!)
