INGREDIENTS

4 Skinless boneless chicken breast halves
1 c Fresh bread crumbs
1/2 ts Onion powder
1/2 ts Garlic powder
1/4 ts Cayenne pepper
1/8 ts Ground ginger
1/3 c Fat-free plain yogurt

INSTRUCTIONS

1. Preheat oven to 400F. Lightly spray a medium size shallow baking dish
with vegetable spray.
2. Rinse chicken and pat dry. In a shallow pan, combine bread crumbs, onion
powder, garlic powder, cayenne pepper and ginger.
3. Dip chicken in yogurt, then into crumb mixture. Place in prepared dish.
Bake uncovered, 45 to 50 min, or until tender.
Notes: Calories per serving: 128, 1.7 grams fat, 0.3 grams fibre, 3 WW
Points Made 03/22/98 - Added 1 Tbsp dried parsley for colour and 1/2 tsp
blackening spice for kick. Served with asparagus and wild rice
