1. Mince scallions. Place in a deep bowl with salt, oil and soy sauce.
2. Bring water to a boil; pour over scallions, and let stand 1 to 2
minutes.
VARIATIONS: Add with scallions, 1 garlic clove, minced; and/or any
fresh, tcnder greens, such as parsley, spinach or water cress, chopped.
For the peanut oil, substitute a few drops of sesame oil.
