In Shansi I found Chinese Christians who were accustomed to spend time in fasting and prayer. They recognized that this fasting, which so many dislike, which requires faith in God, since it makes one feel weak and poorly, is really a Divinely appointed means of grace. Perhaps the greatest hindrance to our work is our own imagined strength; and in fasting we learn what poor, weak creatures we are-dependent on a meal of meat for the little strength which we are so apt to lean upon.

Cheese & Green Chile Casserole

INGREDIENTS

2 cn Whole green chiles; seeded, broken into strips
2 lb Sharp cheddar; grated
4 Eggs; beaten
1 cn (13-oz) evaporated milk
1 cn (4.5-oz) evaporated milk
1 ts Salt
1/4 c Yellow corn meal (up to)
1 lb Mozzarella cheese; grated
1 cn (8-oz) tomato sauce

INSTRUCTIONS

Lightly grease a 13x9-inch baking dish. Layer green chiles & grated Cheddar
cheese in dish. Add milk to beaten eggs & stir in salt & corn meal. Pour
over green chiles & Cheddar. Bake at 350 for 45 minutes. Remove from oven &
add mozzarella cheese & cover with tomato sauce. Bake 10 more minutes.
