Cheesed Zucchini

INGREDIENTS

4 Medium zucchini (or other
Summer squash)
1/2 c Milk
1/3 c Mayonnaise
2/3 c Grated sharp cheese
1/4 ts Salt
Dash of pepper

INSTRUCTIONS

Cheesed Zucchini Pare zucchini and cut into 1/4-inch slices. Cook slowly in
very little milk slowly to mayo; stir in about half of the cheese and
seasonings. Cook over low heat until thickened. Pour over zucchini and
sprinkle with remaining cheese. Bake at 400 until top is browned.
Or, place under broiler for several minutes until cheese is melted and top
browned lightly.
Serves 6.
