Chewy Ginger Cookies

INGREDIENTS

3/4 c Shortening
1 1/4 c Sugar; divided
1 Egg
1/4 c Molasses
1 ts Vanilla extract
2 Cusp all-purpose flour
1 ts Ground cinnamon
1 ts Ground ginger
1 ts Baking soda
1/2 ts Salt
1/2 ts Ground cloves

INSTRUCTIONS

In a mixing bowl, cream shortening and 1 cup sugar. Add the egg,
molasses and vanilla; mix well. Combine dry ingredients; add to
creamed mixture and mix well. Roll into 1" balls; roll in remaining
sugar. Place 1-1/2" apart on ungreased baking sheets. Bake at 375
degrees for 10 minutes or until lightly browned. Cool on wire racks.
Store in an airtight container.
