Chicken Mozzarella

INGREDIENTS

2 ts Vegetable oil
1/4 c Plus 3 Tbs. buttermilk baking mix
1 tb Plus 1 tsp. grated Parmesan cheese
1 1/4 ts Italian herb seasoning
3/4 ts Paprika
1/8 ts Pepper
4 lg Chicken breast halves
1/4 c Chilli sauce
4 sl Mozzarella cheese

INSTRUCTIONS

Prep: 10 min, Cook: 50 min.
Preheat oven to 425°F. Brush oil over the bottom of a baking pan. Combine
next 5 ingredients in a shallow bowl. Coat chicken with mixture and arrange
skin sides down in pan. Bake uncovered 45 minutes. Turn chicken. Spoon 1
tablespoon chili sauce on each breast half. Top each with cheese slice.
Bake about 5 minutes more, until cheese is melted.
