Chile Chickpeas

INGREDIENTS

1 lg Onion; Vidalia, Walla Walla, or same, chopped medium
3 Garlic cloves; peeled and minced
1 Hab; seeded and chopped fine
1 Serranos; seeded and chopped fine, up to 2
1 ts Good curry powder
1 ts Calvin's chile powder
2 cn Chickpeas
1 cn (15oz) Rotel or other tomato type
2 tb Lime juice

INSTRUCTIONS

Cook onion, garlic and peppers in enough oil to cover bottom of pan,
until onion is translucent, add the curry and the Calvin's and then
the two cans of chickpeas, drain one can, then add the tomatoes, and
the lime juice. Notice that there is no salt in this recipe other
than is in the canned veggies,
add more if required....if you wish to have this thicker, then use a
little cornstarch, water mix...1 tbls of each, then add to the
chickpeas....this is spicy, tasty, and is a great way to get meatless
protein.
