Chile Mashed Potatoes

INGREDIENTS

6 Idaho potatoes; peeled
1/2 c Butter
1 c Heavy whipping cream; warm
2 Roasted poblanos; peeled, seeded, and
; diced
Salt and pepper

INSTRUCTIONS

Preheat the oven to 350 degrees. Boil the potatoes in salted water
for 15 minutes, or until tender. Drain, place on a sheet pan, and
bake at 350 degrees for 10 minutes. Remove the potatoes from the oven
and transfer to a large bowl. Add the butter to the bowl and mix with
an electric mixer until smooth. Add the cream until it reaches the
desired consistency. Stir in the poblanos and season to taste with
salt and pepper.
Yield: 6 servings
