Chipotle Mayonnaise

INGREDIENTS

1 tb Chopped chipotle in adobo; or to taste
1 Whole Egg
1 ts Chopped garlic
1 tb Chopped cilantro
1/2 ts Sugar
2 ts Fresh lemon or lime juice
Salt; to taste

INSTRUCTIONS

Place chipotle, egg, garlic, cilantro, sugar and lemon zest in a
blender jar and blend until smooth. With motor running slowly pour in
oil until mayonnaise forms. Season to taste with salt. Thin if
necessary with water or stock. Store covered in refrigerator up to 5
days.
