Chocolate-Dipped Orange Biscotti

INGREDIENTS

2/3 c Sugar
1/2 c Vegetable oil
1 tb Grated orange peel
1 1/2 ts Vanilla
2 Eggs
2 1/2 c All-purpose flour
1 ts Baking powder
1/4 ts Baking soda
1/4 ts Salt
4 oz Semisweet chocolate; melted
Grated orange peel; if desired

Heat oven to 350 degrees.  Beat sugar, oil, 1 T orange peel, vanilla and
eggs in large bowl.  Stir in flour, baking powder, baking soda and salt.
Knead dough on lightly floured surface until smooth.
Shape half of dough at a time into rectangle, 10x3 inches, on ungreased
cookie sheet.  Bake 25-30 minutes or until toothpick inserted in center
comes out clean. Cool on cookie sheet for 15 minutes.
Cut crosswise into 1/2 inch slices.  Place slices, cut sides down, on
cookie sheet. Bake about 15 minutes, turning once, until crisp and light
brown. Immediately remove from cookie sheet. Cool completely on wire rack.
Dip one end of each cookie into melted chocolate; sprinkle with orange
peel. Place on waxed paper until chocolate is firm. Makes about 3 dozen.
Each: 85 calories, 1g protien, 11g carb, 4g fat, 10mg chol, 30mg sodium,
20 mg potassium.
