Chocolate Pudding With Bananas And Graham Crackers

INGREDIENTS

3 Whole graham crackers
crushed
1 Ripe banana, thinly sliced
1/2 c Sugar
1/4 c Unsweetened cocoa powder
3 T Cornstarch
1 pn Salt
3 c 2% low-fat milk
1/2 t Vanilla

INSTRUCTIONS

Older children can prepare this by themselves with adult supervision;
younger children love to mash and distribute the graham cracker  crumbs
and arrange the banana slices.  Per serving: Calories: 181 Fat: 3.1 g.
(15% of calories) Saturated  fat: 1.7 g. Cholesterol: 9    mg. Sodium:
129    mg. Evenly divide  the graham cracker crumbs among 6 custard
cups or ramekins. Press  them into the bottom. Top with banana slices.
In a large saucepan, mix the sugar, cocoa, cornstarch and salt. Stir
in the milk. Whisk over medium heat until the pudding comes to a boil
and thickens. Cook for 1 minute longer. Remove from the heat and stir
in the vanilla. Pour into the prepared custard cups. Chill. Serves 6.
