Chunky Turkey Soup with Winter Vegetables

INGREDIENTS

4 c Chicken broth
1 c Apple juice
1/2 c Cubed peeled sweet potatoes
1/2 c Cubed peeled turnips
1/2 c Diced celery
1/2 c Diced onions
1 Clove garlic, minced
1 tb Snipped fresh parsley
2 ts Snipped fresh thyme or 1 tsp dried
1 ts Snipped fresh rosemary or 1/2 tsp dried
1 c Broccoli florets
1 c Cooked baby lima beans
1 c Diced cooked turkey
Shredded Gruyere or Swiss cheese (garnish)

INSTRUCTIONS

Combine the broth and apple juice in a 3 or 4 quart saucepan. Place over
medium heat.  Add the sweet potatoes, turnips, celery, onions, garlic,
parsley, thyme and rosemary.  Cover and bring to a boil. Reduce heat and
simmer for 30 minutes.
Add the broccoli, lima beans and turkey.  cover and simmer until the
vegetables are tender, about 20 minutes.  Garnish with the cheese.
Servings:  2
If using chicken, substitute white potatoes for the sweet potatoes, and
carrots in place of the broccoli.
