Citrus Apple Meringue

INGREDIENTS

1 Lemon
625 g Bramley apples; (1 1/4lb)
3 tb Orange marmalade
2 lg Egg whites
75 g Caster sugar; (3oz)

INSTRUCTIONS

Heat the oven to 190 C, 375 F, Gas Mark 5.
Cut thin strips of rind from the lemon using a zester and squeeze the
juice, put both into a large pan with 1 tablespoon of water.
Peel, core and cut the Bramley apples into 1. 25cm chunks and put
into the pan. Cook over a high heat for about 5 minutes, stirring all
the time until the apples just begin to soften, add the marmalade and
stir again to help it dissolve.
Turn into an ovenproof dish.
Whisk the egg white until stiff, add half of the caster sugar and
whisk again until the whites are firm. Fold in the rest of the sugar
then spoon over the apple and swirl. Bake in the oven for 15 minutes
until the top is golden.
