Country-Style Maine Sardines

INGREDIENTS

2 cn (4 oz each) Maine Sardines
2 tb Parsley; chopped
3 c Mashed potatoes; seasoned with salt and pepper
2 Tomatoes; thinly sliced
Salt and pepper to taste
1 c Cheese; shredded

INSTRUCTIONS

Drain sardines.  Add parsley to potatoes and mix well.  Spread potatoes in
the bottom of a well-greased baking dish (8 x 8 x 2) Arrange sardines over
potaotes.  Cover with tomato slices.  Sprinkle with salt and pepper. Top
with cheese.  Bake in a moderate oven (350 F) for 25 to 30 minutes or until
heated through and cheese melts.
