INGREDIENTS

1/2 c Butter
1/2 c Chopped green pepper
1/2 c Chopped onion
2 Green onions; chopped
1/4 c Chopped parsley
1/4 c Flour
2 c Milk
2 ts Salt
1/4 ts Pepper
3 c Half and half
2 c Crabmeat
1/3 c Sherry

INSTRUCTIONS

Melt butter in Dutch oven. Saute green pepper, onions, green onions
and parsley in butter. Sprinkle with flour. Cook, stirring constantly
1minute. Gradually stir in milk. Cook, stirring constantly, until
thickened. Season with salt and pepper. Stir in half and half. Bring
to a boil, reduce heat and stir in crab. Simmer 5 minutes, stirring
frequently. Stir in sherry. Yield: 8 servings.
