Cracker ‘n Vegetable Lasagna

INGREDIENTS

1 md Red Bell Pepper; cut in strips
1 sm Onion; sliced
1 sm Zucchini; sliced
1/2 ts Oregano Leaves
1 tb Fleischman's Margarine
32 Premium Saltine Crackers; any kind
4 oz Reduced Fat Cheddar Cheese; shredded
2 c Skim Milk
1 c Egg Beaters® 99% Egg Substitute

INSTRUCTIONS

In large skillet, over medium heat, cook and stir red pepper, onion,
zucchini and oregano in margarine until tender. In lightly greased 9 x 9 x
2-inch baking pan, layer half each of the crackers, vegetable mixture and
cheese. Repeat layers, ending with cheese.
In bowl, beat milk and egg product; evenly pour over cheese layer. Bake at
350° for 30 to 35 minutes or until knife inserted in center comes out
clean.
