Cranberry Crunch

INGREDIENTS

1 c Granulated sugar
1 tb Cornstarch
1/2 c Water
1 ts Vanilla
1/4 ts Salt
2 c Cranberries — chopped
1/2 c Raisins
1 c Rolled oats
1 c Brown sugar — packed
1/2 c Unbleached flour
1/3 c Margarine

INSTRUCTIONS

Preheat oven at 350.  Prepare a 8" square pan with cooking spray and flour.
In a saucepan, combine granulated sugar, cornstarch, water, vanilla, salt,
cranberries, and raisins. Bring to a boil over medium heat. Reduce heat;
simmer 5 minutes and cool slightly.  In a small mixing bowl, combine oats,
brown sugar, and flour.  Cut in margarine until crumbling. Sprinkle with
cranberry filling.  Top with remaining crumbs.  Bake for 45 minutes.
