Cranberry Relish

INGREDIENTS

2 c Cranberries
2 Oranges; peeled and sectioned,
Juice reserved
2 Ribs celery; diced
1/2 c Sugar
1 sm Red onion; diced, about 1/2 cup
2 tb Lime juice
2 ts Grated fresh ginger
1/4 c Fresh mint leaves; chopped

INSTRUCTIONS

In food prcessor or blender process cranberries. in batches, until coarsely
chopped: transfer to bowl. Stir in oranges with their juice, celery, sugar,
onion, lime juice and ginger. Refrigerate at least 1 hour. toss with mint
just before serving.
