INSTRUCTIONS
Place the first seven ingredients in a large saucepan.
Bring to the boil, then simmer over a low heat for 20-30 minutes or
until the vegetables are tender. Stir occasionally.
Place the mixture in a food processor or blender and process until the
mixture is smooth.
Return to the pan. Season with black pepper and add the evaporated
milk.
Reheat, adding extra water if required. Stir constantly.
Sprinkle with parsley before serving.
