Dijon-Crumbed Chicken

INGREDIENTS

4 Boneless skinless chicken
Breast halves
1/2 c Dijon mustard
1 c Whole-wheat bread crumbs
pn Cayenne to taste
pn Black pepper, to taste
Non-stick olive oil spray

INSTRUCTIONS

Preheat oven to 350°.
Lightly spray a 7" x 10" glass baking dish with non-stick spray.
Combine bread crumbs, cayenne & pepper in a shallow bowl.
Liberally spread the chicken breast halves with dijon mustard.  Dredge in
seasoned bread crumbs on both sides.  Place in a single layer in prepared
baking dish.  Spray the top of coated chicken with a little additional
olive oil spray.
Place in the hot oven & bake for about 30 minutes, or until done.
