INGREDIENTS

8 Eggs, scramble in bowl w/milk or cream to your preference NOT MUCH though or mixture will be watery when cooked)
Salt, pepper, garlic powder, etc. TO taste…this isn't an exact science! =)
2 tb Butter/marg
Sliced leftover baked potatoes (at least 4)
1 c Grated cheese, cheddar is best
1/4 c Chopped green onion
Crumbled bacon pieces (pre-cooked) OR
1 c Ham chunks

INSTRUCTIONS

Slice potatoes and pop in skillet (cast iron tastes best, but thats my own
personal opinion) with the butter that has been melted in the pan (don't
let the butter burn). Cook over medium heat until potatoes begin to brown.
Pour scrambled eggs (scramble your eggs with the seasonings listed in the
ingredients) over potatoes and add onions. Cook until eggs begin to set,
then stir gently, folding all together. When eggs have lost liquid stage,
add bacon or ham and cheese. Cook until eggs are done, meat is heated
through, and cheese is melted. Serve with biscuits, toast, or english
muffins...YUM. This should serve 3-4 people. Enjoy! Posted to EAT-L Digest
