Fresh Nutty Rice Noodles With Egg

INGREDIENTS

450	g	Rice noodles or vermicelli
1	T	Hoi sin sauce
1	T	Soy sauce
1	t	Ginger wine, optional
2	t	Sesame seed oil
2	t	Ordinary vegetable oil
1	t	Chilli sauce
1	t	Sugar
2	T	Sesame seeds
3		Spring onions, chopped very
		finely
4		Eggs made into omelettes and
		cut into
		shreds to garnish

INSTRUCTIONS

Put the noodles in a large bowl, cover with boiling water and leave  to
soak for 5 minutes before draining and keeping to one side.  Add the
