Ginger Chicken Salad

INGREDIENTS

3 lb Roasted or bbq'd chicken
12 oz Spinach or romaine lettuce
1 c Bean sprouts
1 Yellow bell pepper
Seeded and slivered
1/2 c Toasted almonds
3/4 c Thinly sliced sweet red
Ginger
Optional…Enoki Mushrooms
3 tb Red wine vinegar
1 tb Light soy sauce
2 tb Oriental sesame oil
1 tb Juice from a jar of sweet
Red ginger
2 ts Hoisin sauce
1/4 ts Chinese chili sauce
1/2 ts Salt
3 tb Minced green onions
1 tb Finely minced ginger

INSTRUCTIONS

DRESSING
Discard chicken skin.  Remove chicken from bones and cut into bite-sized
pieces.  Set aside.  Bunch greens together and cut into thin slivers. Place
all salad ingredients into a large bowl.  Mix dressing well.  Toss with
