Gluten-free Lemon Cake

INGREDIENTS

4 Eggs
3/4 c Sugar
1 t Vanilla
1/4 c Vegetable oil
1 T Lemon peel
2 T Lemon juice
1/2 c Rice flour
1/4 c Potato starch

INSTRUCTIONS

Wed, 26 Apr 1995 06:22:15 +0000  Beat eggs and sugar together.  Add
vanilla, oil, lemon peel, lemon  juice, and flours. Beat until smooth.
Pour into greased 9"x9" baking  pan. Bake in preheated 350 degree oven
for 30 minutes.  May frost or  serve with hot lemon sauce.
