Great Granola

INGREDIENTS

3 c Rolled oats
1/2 c Raisins
3/4 c Plus 2 Tablespoons Apple Juice concentrate
3/4 c Wheat germ
1/4 c Unslated soy nuts
1/4 c Unslated sliced almods or chopped walnuts
2 tb Raw sesame seeds
1 ts Ground cinnamon, or to taste

INSTRUCTIONS

A versatile, crunchy treat to eat by the handfull or bowlful, mixed with
other cereals, and topped with wilk or yogurt Makes about 5 Cups
1)Preheat the oven to 350 degrees
2)Spread the oats in a nonstick baking pan, 11x9 inches or larger. Toast in
the oven for 10 minutes. Remove from the oven and reduce heat to 300
degrees.
3)Meanwhile, combine the raisins & 1/2 cup of the Juice concentrate in a
small saucepan. Bring to a boil. Reduce the heat & simmer for 5 minutes.
Drain, reserving the liquid, and the raisins seperately.
4)Add the raisin liquid and remaining ingredients except the raisins to the
oats; combine well with wooden spoon. Return the pan to the oven and toast
for 20 minutes, stiring twice during baking.
5)Stir in the raisins well and press the mixture firmly into the pan. Bake
anothe 5 minutes. Let Cool to room temperature. Break up the granola and
store it in a tighly covered container.
1/2 C.= 1 1/2 whole grain servings; 1/2 protien serving; 1/2 other fruit
