INGREDIENTS

1 1/2 c Cooked brown rice
1 lg Stalk celery; minced
1 Onion; minced
1/2 c Dried apricots; chopped, or currants
Dry dill
Salt and pepper
Other herbs to taste
1/2 Lemon; juice of

Another nice recipe adapted from Moosewood...
Saute onion and celery till soft.  Add rice and apricots.  If it is too
dry, andd a few tablespoons of broth or water and cover to steam the
mixture for a few minutes. Add a generous sprinkling of dill, some salt, a
bunch of pepper, other herbs to taste, and stir. When hot, add the lemon
juice, stir, and serve.
I think this would benefit from the addition of chopped parsley or some
mint.  Also, some chopped roasted red bell pepper would add color and
flavor (these days I add it to EVERYTHING!). Even some chopped tomato would
add moisture and color. This would make a good squash stuffing, or eggplant
stuffing (as suggested in Moosewood).
