INGREDIENTS

2 tb All-purpose flour
1 tb Sugar
1 ts Salt
1 sm Red onion; cut into
; 1/4-inch-thick
; slices
Vegetable oil for frying
1/2 lb Green beans; trimmed and cut
; into 3-inch pieces
1/2 tb Unsalted butter
1 ts Worcestershire sauce

INSTRUCTIONS

In a small bowl whisk together flour, sugar, and salt. Separate onion
slices into rings and toss in flour mixture to coat.
In a 9-inch skillet heat 1/2 inch oil to 380F. on a deep-fat thermometer.
Shake off excess flour from half of onion rings and fry them, turning,
until golden 1 to 2 minutes. Transfer onion rings with tongs to paper
towels to drain and fry remaining onion rings in same manner.
In a vegetable steamer set over boiling water steam beans, covered, about 6
minutes, or until tender. In a large bowl toss beans with onion rings,
butter, Worcestershire sauce, and salt and pepper to taste.
Serves 2.
