Green Sauce with Capers And Herbs

INGREDIENTS

4 Pickled cucumbers
1 lg Bunc flat-leaved parsley
1 oz Fresh mint
1 oz Capers
2 Eggs; hard-boiled
4 tb Fresh breadcrumbs
2 Garlic cloves
2 tb White wine vinegar
1 tb Sugar
8 tb Extra virgin olive oil
Salt and pepper

INSTRUCTIONS

1. Finely chop the cucumbers, parsley, mint and capers. Mash the
hard-boiled eggs.
2. Put all the ingredients in a food processor and blend everything
together to produce a smooth, green sauce. Serve warm or cold.
