Green Tea Salad Dressing

INGREDIENTS

1 ts Green tea leaves; (gyokuro is best but
; Sencha or Gunpowder
; will do)
100 ml Hot water; (3 1/2fl oz)
1 ts Caster sugar
2 Strips lemon zest
Salt and freshly ground black pepper
2 tb Hazelnut oil
2 ts White wine vinegar

INSTRUCTIONS

Infuse the tea leaves in the hot water (don't use boiling water) for 5
minutes then strain into a pan. Add the sugar and bring to the boil and
simmer until the liquid is reduced to 2-3 tbsp. Add the strips of lemon
zest and leave to infuse until cold.
Remove the lemon zest, add the oil, vinegar, salt and pepper to the liquid
and whisk.
