Grilled Banana Compote

INGREDIENTS

2 lg Unpeeled bananas; cut in half
1 ts Vegetable oil
1 tb Unsalted butter
1/4 c Brown sugar
1/4 c Dark rum
Splash Grand Marnier
1 ts Ground cinnamon
1/2 ts Ground ginger
Orange zest; for garnish

INSTRUCTIONS

Rub the cold grill rack with oil, and light coals or start grill. Brush
bananas with vegetable oil and grill for 2 to 3 minutes. Remove from the
grill, peel, and cut into medium-size pieces. In a medium-size saute pan,
heat butter until bubbling. Add brown sugar and bring to a boil. Add banana
pieces and rum. Splash with Grand Marnier. Boil for about 1 minute. Add
cinnamon and ginger; remove from heat. Serve warm over ice cream, garnished
with orange zest.
Serves four.
