Grilled Bruschetta with Pimento, Balsamic Vinegar And Oil

INGREDIENTS

1/2 Crispy-crust Italian bread loaf
1 Garlic clove – (to 2); peeled
1/4 c Olive oil
1 sm Jar Pimentos
1 ts Balsamic vinegar
1 tb Olive oil
Salt; to taste
Freshly-ground black pepper; to taste

INSTRUCTIONS

Slice the bread into 1/2- to 3/4-inch-thick slices. Heat a stove top grill
and place the sliced bread on top. Grill the bread until it is toasted and
marked on both sides. Rub the garlic cloves on one side of the grilled
bread. With a pastry brush, brush both sides of the bread with a little
olive oil. Drain the pimentos and toss them with the Balsamic vinegar, oil,
salt and pepper to taste. Top the grilled bread with the pimento mixture.
Serve warm. This recipe yields 2 servings.
