Grilled Chicken With Mint

INGREDIENTS

1/2 c Lemon juice
1/2 c Fresh mint, chopped
8 Cloves garlic, minced
2 T Olive oil
1/2 t Fresh ground black pepper
1 3/4 lb Chicken breast halves
without skin
Lettuce leaves, shredded
12 Pieces skewers, bamboo

INSTRUCTIONS

In a large shallow dish, combine lemon juice, mint, garlic, oil and
pepper. Slice chicken across the grain into 1/2 inch  thick slices.
Add to the lemon mixture and toss to coat well.  Cover and marinate
for at least 1 hour or overnight.  Soak bamboo skewers in water for at
least 30 minutes.  Prepare gas or charcoal grill.  Thread chicken on
skewers and grill  about 2 1/2 - 3 minutes on each side.  Serve over
shredded lettuce.  Garnish with fresh tomato wedges if  desired. Posted
