INSTRUCTIONS
FOLLOWING
FOR THE COULIS
1. Preheat the oven to 220°C/425°F/Gas Mark 7. Brush the bread lightly with
oil and bake on a pre-heated baking tray until crisp and golden.
2. Brush each slice of goats' cheese with honey, then roll in the sesame
seed mixture.
3. Place the cheese on the croutons, then bake in the oven until golden
brown on the outside and soft inside.
4. Meanwhile, prepare the coulis. Peel and chop the mangoes. Place the
mango flesh in a liquidiser with the white wine and blend until smooth.
5. Spoon a little of the mango coulis on to the base of each plate and
place a goats' cheese-topped crouton on top of each.
