Grilled Salmon W/ Roasted White Corn Salsa and Basil Cream

INGREDIENTS

4 tb Olive Oil
2 ts Lemon Zest; grated
2 tb Fresh Mint; chopped
1/2 ts Salt
1/4 ts Freshly Ground Pepper
6 6-Ounce Salmon Fillets Or Steaks; cut 1/2-inch thick
Roasted White Corn Salsa (Recipe Follows)
Basil Cream (Recipe Follows)
Cilantro Or Mint Sprigs

INSTRUCTIONS

GARNISH
Whisk olive oil, zest, mint, salt and pepper together and marinate salmon
in mixture for 1 hour. At serving time, grill salmon over hot coals until
just done. Place on warm plates with a heaping tablespoon or two of corn
salsa on top, warm basil cream around and a garnish of herb sprigs. Serve
immediately
