Grilled Sambal Quail with Braised Green Papaya

INGREDIENTS

4 tb Sambal; (condiment)
2 tb Minced garlic
2 tb Minced ginger
1/2 c Red wine
1/4 c Chopped scallions
2 tb Molasses
1/2 c Canola oil
Salt; to taste
Freshly-ground black pepper; to taste
8 Quail
Chili Oil; see * Note
Braised Green Papaya; see * Note

INSTRUCTIONS

* Note: See the "Chili Oil" and "Braised Green Papaya" recipes which are
included in this collection.
Mix all ingredients, marinate and refrigerate quail for at least 6 hours;
overnight is ideal. Season the quail and grill until done; this will take
about 20 minutes. Be careful not to burn the skin. Place on top of the
Braised Green Papaya. Garnish with Chili Oil. This recipe yields 4
servings.
