INGREDIENTS

1 Hearts of palm, 150z drain
and dice
1 Garlic
2 T Jalapeno vinegar*
1/2 t Salt
1/2 t Pepper
6 T Olive oil
1 Zucchini, diced
1 Tomato, diced
1/2 Sweet onion, diced
5 g fiber, 373mg sodium

INSTRUCTIONS

Combine all the ingredients and refrigerate for at least 2 hours.
Spoon onto a bed of mixed lettuce. *Note: you can substitute the
liquid from a jar of pickled jalapeno for the Jalapeno vinegar
