Homemade Summer Sausage

INGREDIENTS

2 lb Ground chuck
2 tb Morton's quick curing salt
1/2 ts Onion powder
1/2 ts Garlic powder
1 1/2 tb Liquid smoke flavoring
1 c Water
1 ts Mustard seed
1 ts Crushed peppercorns
(optional)

INSTRUCTIONS

Mix together with hands.  Form into 3 sticks about the side of a half
dollar.  Wrap in foil an refrigerate for 24 hours.  Unwrap and bake in 300
F oven for 1 hour in a shallow pan.  Let cool 1 hour.  Store in clean foil
in refrigerator.  Serve with crackers.
