Honey-Orange Beets

INGREDIENTS

6 Beets
1 ts Grated orange rind
2 tb Orange juice
2 ts Butter
1 ts Liquid honey
1/4 ts Ground ginger
Salt and pepper

INSTRUCTIONS

In pot of boiling water, cook beets for about 40 minutes or until tender.
Drain and let cool slightly; slip off skins and cube or slice.
In saucepan, heat orange rind and juice, butter, honey and ginger over low
heat until butter melts.  Add beets and toss to coat. Season with salt and
pepper to taste.  Makes 4 servings.  Typed in MMFormat by
