INGREDIENTS

3 c Black-eyed peas (frozen or canned)
Drippings from 4 strips of bacon
2 c Uncooked rice

INSTRUCTIONS

Cook peas with bacon drippings for one hour, using plenty of water. Add
rice and stir. Place in greased casserole dish and cover lightly with foil.
Bake at 400 degrees for 30 minutes. REduce heat to 250 degrees and cook for
another hour.
