Hot Zucchini Salad

INGREDIENTS

2 tb Olive oil
1 lb Small zucchini; thinly sliced
2 Tomatoes; chopped, juice
Reserved
1 Onion; thinly sliced
1/4 lb Mushrooms; thinly sliced
2 tb White wine vinegar
1 ts Dried thyme
1 tb Chopped fresh chives
1/4 c Shredded Parmesan cheese

INSTRUCTIONS

Saute onions in large skillet over high heat in hot oil until tender. Add
zucchini, tomatoes, onions and mushrooms. Saute until all vegetables are
tender. Add the vinegar, thyme, chives and reserved tomato juice. Cook 1
minute. Pour mixture into serving bowl. Sprinkle with shredded Parmesan to
serve.
Approximately 6 minutes.

from fat); 14g Protein; 39g Carbohydrate; 14mg Cholesterol; 374mg Sodium
