Jam And Coconut Muffins

INGREDIENTS

2 1/2 c Flour
3 t Baking powder
1/2 c Caster sugar
1 Egg
1 1/4 c Coconut
1 t Vanilla essence
1 1/4 c Milk
3 T Jam
6 T Vegetable oil
Little extra coconut for
garnish

INSTRUCTIONS

Preheat oven to 400øF, prepare pans. Sift flour & baking powder,  stir
in sugar & coconut. Beat egg, vanilla, milk & oil together. Add  dry
mix to wet mix until just combined. Place a large tablespoon of  batter
into each pan, add a teaspoon of jam to each and the rest of  the
batter. Sprinkle tops with a little coconut. Bake for 25-30 mins  or
until well risen & firm to the touch. Makes 9-10 muffins.
