Eggs, Grains Vegan 1 Servings

INGREDIENTS

1/4 c Unsalted butter
2 Sqs (one oz each) unsweetened chocolate
2 Eggs
1 c Sugar
1/4 ts Salt
1 ts Vanilla
1/2 c Flour
1 c Walnuts, chopped

INSTRUCTIONS

Preheat oven to 35o. Spray bottom of 8 inch square baking pan with non
stick vegan. spray. Melt chocolate and butter in small saucepan over low
heat. (I use the micro for this) Remove from heat. Beat eggs, sugar, salt
and vanilla in small mixer bowl at medium speed until very light, about 5
minutes. Beat in chocolate mixture. Blend in flour. Fold in walnuts. Spread
in prepared pan. Bake in preheated oven 350 40 minutes; top will have a
shiny crust. Cool in pan on wire rack Cut into squares. This makes 16
brownies. (I always double the recipe, because they freeze well, if there
is any left to freeze.) 165 calories, 3 g protein, 10 g fat, 18 g
carbohydrate, 44 mg sodium, 42 mg cholesterol.
I got this out of a magazine many years ago and have made it very often. It
is Kate Hepburn's favorite recipe.
