Kilkenny Corned Beef

INGREDIENTS

5 lb Corned beef; (1 piece)
Boiling water
1 tb Pickling spice; optional
1/2 c Brown sugar
1/3 c Brown mustard; or dijon

INSTRUCTIONS

Wash corned beef. Place in a large roasting pan on oven rack. Cover with
boiling water.  Cover with foil.  Bake at 325 degrees for 2 hours or until
tender when pierced with a fork.  This can be done the day before.
Refrigerate.
Drain Corned Beef and place in roasting pan. Bake at 325 degrees for 30
minutes.  Combine the brown sugar and the mustard and spread it over the
corned beef.  Bake for 30 minutes more or until well glazed.
