Leek Galettes

INGREDIENTS

500 g Leeks; julienned
1 tb Margarine or butter
2 tb Water
500 g Boiled potatoes; (to be cooked in
; their skins the day
; before), peeled and
; grated
2 Eggs
3/4 ts Salt
1 pn Nutmeg
Pepper to taste
Oil or butter for frying

INSTRUCTIONS

1 Heat the margarine or butter in a deep frying pan and add the leeks. Add
the water and steam the leeks until soft. In a bowl, mix together the
potatoes, eggs, salt, pepper and nutmeg.
2 Add the leeks and taking a large spoonful of the mixture at a time,
flatten them in the frying pan to form small round galettes (about the size
and shape of a burger). Fry them until golden brown on each side and serve
with seasonal salad.
