Light Potato Salad

INGREDIENTS

2 lb Potatoes; cold,cooked
3 c Nonfat cottage cheese
1/2 c Italian Dressing; bottled – lowfat
6 tb Lowfat mayonnaise
2 tb Nonfat plain yogurt
1 Whole Red bell pepper; or green – chopped
1 Whole red onion; minced
1/4 c Fresh parsley
; salted to taste
; pepper to taste
; lettuce optional

INSTRUCTIONS

Peel and thinly slice potatoes. Add cheese, dressing, mayonnaise, yogurt,
bell pepper, onion, parsley, salt and pepper. Toss lightly to mix evenly.
Refigerate 2 or more hours until serving time. allowing flavours to blend.
Serve on beds of lettuce.
