INGREDIENTS

3 tb Fresh lime juice
1 1/2 tb Champagne vinegar
2 ts Grated lime zest
1 tb Minced garlic
2 tb Chopped cilantro and/or mint
1 ts Chopped; seeded Serrano chile, or to taste
1 1/2 ts Toasted ground cumin
3 tb Olive oil
Salt; to taste
Freshly-ground black pepper; to taste

INSTRUCTIONS

Whisk all of the ingredients together. Can be stored covered in the
refrigerator for up to 3 days. This recipe yields about 1 cup of
vinaigrette.
