Lowfat Vanilla Granola

INGREDIENTS

2 c Old-fashioned oats
1 tb Ground cinnamon
1 Vanilla bean; split and seeded
1 c Coconut
1 c Dried sour cherries or cranberries
1 c Golden raisins
2 tb Light brown sugar
1/3 c Apple juice; concentrate

INSTRUCTIONS

Preheat oven to 300 degrees In large bowl, combine oats, sugar, cinnamon,
and juice, and toss well. Spread on large cookie sheet and bake 25 minutes,
stirring occasionally. Stir in coconut and vanilla seeds and bake 25
minutes till lightly brown. Stir in cherries, raisins. Cool and store in
air tight container for up to one month.
