Lox and Onions And Eggs

INGREDIENTS

1/4 c Unsalted butter
1 1/3 c Onions; minced
1/2 lb Lox or smoked salmon; chopped
8 Eggs; beaten just to combine white and yolks

INSTRUCTIONS

Prep: 5 min, Cook: 5 min. Melt butter in a heavy nonstick skillet over low
heat. Saut. onions 3-4 minutes until very soft but not brown. Stir in lox
and cook 1-2 minutes. Add eggs. Turn heat to very low and gently stir until
eggs are set. Serve immediately.

pan, it adjusts the number of servings only in multiples of 1.The
